Heritage Dairy Breeds in Modern Day Farming
Shannon Nichols will discuss the importance of heritage dairy breeds and the challenges of making critically endangered breeds relevant to modern day farming using the Kerry cattle breed as a model. Ms. Nichols and her husband have run a certified organic dairy and processing plant for the past 12 years. She will speak about her efforts to maintain and improve the production ability of heritage breed cattle and goats as well as the suitability of their milk for various dairy products. It typically uses livestock that is donated or loaned to the foundation and works closely with veterinarians to preserve the health of the animals.
